Ingredients:
1 butternut squash (about 1kg), peeled and deseeded
2 tbsp olive oil
1 tbsp butter
2 onions, diced
1 garlic clove, thinly sliced
2 mild red chillies, deseeded and finely chopped
850ml hot vegetable stock
4 tbsp crème fraîche (plus more to serve)
👩🍳 Method:
1️⃣ Preheat the oven to 200C/180C fan/gas 6.
2️⃣ Cube the squash (4cm/1½in), toss with 1 tbsp olive oil, and roast for 30 mins until golden and soft.
3️⃣ In a saucepan, melt butter and 1 tbsp olive oil. Add onions, garlic, and most of the chillies. Cook on low heat for 15-20 mins until onions are soft.
4️⃣ Add roasted squash, stock, and crème fraîche. Blend until smooth.
5️⃣ Gently reheat, season to taste, and serve in bowls with swirls of crème fraîche and a drizzle of your favourite RishRight Qin-Chilli oil! 🌶️💚
