Ingredients:
1 butternut squash (about 1kg), peeled and deseeded
2 tbsp olive oil
1 tbsp butter
2 onions, diced
1 garlic clove, thinly sliced
2 mild red chillies, deseeded and finely chopped
850ml hot vegetable stock
4 tbsp crème fraîche (plus more to serve)
š©āš³ Method:
1ļøā£ Preheat the oven to 200C/180C fan/gas 6.
2ļøā£ Cube the squash (4cm/1½in), toss with 1 tbsp olive oil, and roast for 30 mins until golden and soft.
3ļøā£ In a saucepan, melt butter and 1 tbsp olive oil. Add onions, garlic, and most of the chillies. Cook on low heat for 15-20 mins until onions are soft.
4ļøā£ Add roasted squash, stock, and crĆØme fraĆ®che. Blend until smooth.
5ļøā£ Gently reheat, season to taste, and serve in bowls with swirls of crĆØme fraĆ®che and a drizzle of your favourite RishRight Qin-Chilli oil! š¶ļøš
