Chinese Hot Oil Noodles (Yo Po Mian)

Chinese Hot Oil Noodles (Yo Po Mian)
 4 oz dried wheat noodles or egg noodles
 a handful of leafy greens (choy sum, spinach, or baby bok choy)
 1 tsp light soy sauce
 1 tsp dark soy sauce
 ½ tsp Chinese black vinegar
 Salt (to taste)
 Chopped scallion
 Chopped cilantro
 2 garlic (minced)
 2 ½ tbsp oil
 Yo Po Chilli

Cook the noodles according to package directions until al dente.

In the same pot, blanch the Pak Choy or greens of your choice until cooked through. Drain.

Add the cooked noodles and greens to a heatproof bowl, along with the light soy sauce, dark soy sauce, Chinese black vinegar, salt, scallion, cilantro, and minced garlic and your favourite RishRight Condiment.

And mix everything together. Serve!
