Basa Bake with Capers & Tomatoes

It may be an odd mix, but I can't remember the last time I ate something I enjoyed as much as this. 

Unsmoked Basa liberally smothered with @rishrightuk #freshqinchillisauce, some capers, a bay leaf or two and some cherry tomatoes. This was all parcelled up in parchment paper and baked for 14 minutes.

I served this with blanched broccoli, a hard-boiled egg and some absolutely smashing panzanella salad.
