About the region
At the foothills of the Qinling mountains lies Qishan, a region in Shaanxi known as both the birthplace of Qin Chilli and the cradle of ancient Zhou civilisation. Here, climate, soil, and culture come together to shape a chilli with fragrance, colour, and depth unlike anywhere else.

The Chilli: Fragrance Over Fire
Qin Chilli is not defined by heat, but by its fragrance. Locally described as “aromatic without burning”, it brings a vivid red colour, thick flesh, and natural oil content. Instead of overpowering dishes, it layers food with a clean, complex aroma.Its rarity comes from nature itself: harvests are often affected by autumn rains, meaning that the best quality Qin Chilli remains limited, and its true flavour is treasured.

The Heritage: Land of Zhou and Food Traditions
Qishan holds a unique place in Chinese history. It was here that the Zhou dynasty first rose to power, leaving behind ancient rituals, bronzeware, and legends that echo through centuries.

Crafted with freshly picked chillies that are naturally fermented straight after harvest, this sauce retains the vivid colour and fresh aroma of the region.
The fermentation is shaped by Qishan’s climate, humidity, and microflora — a living expression of its land and seasons.
