Prawn & Mango Flatbread
Lunch today was wraps two ways: king prawn, mango, avocado and chilli; and mozzarella, tomato and pesto. Both totally delish (mine, however, was the prawn version and I’d argue it was marginally more exciting).

Prawn & Mango Flatbread
Ingredients:
½ pack of king prawns
1 wrap or flatbread - I always use @crostamollica piadinas
1 spring onion, thinly sliced
½ avocado, cut into chunks
½ mango, cut into chunks
½ lime, juiced (reserve a quarter for the garnish)
Chilli oil or Sriracha, to taste - I used @rishrightuk
Small bunch of coriander, chopped
Extra-virgin olive oil
Salt and pepper
Sesame seeds, for garnish
Combine all the ingredients listed above in a bowl while your flatbread warms through (I always do this in a dry frying pan over a low heat).
Once the bread is ready, pile the prawn and mango mixture on top and serve with a slice of lime and any extra seasoning you fancy.
Can be eaten as a wrap or - the easier option - with a knife and fork!
